Pork Roast with Peach Luau Sauce PDF Print E-mail

Printable Recipe

2 lb boneless pork loin roast

½ of a 15 oz can of peaches, drained
1/3 cup catsup
1/3 cup vinegar
2 tablespoons soy sauce (La Choy is gluten free)
1/2 cup brown sugar
2 cloves garlic minced
2 teaspoons ground ginger
1 teaspoon salt
dash pepper

Preheat oven to 350°.
Combine sauce ingredients in a blender and process until smooth. Set aside.
Place roast, fat side down in a shallow baking pan.
Bake roast for 30 minutes then pour sauce over roast.  Return roast to oven and bake 30 more minutes or until meat thermometer reads an internal temperature of 160° - medium; 170° - well done.
