Creamy Garlic and Herb Cauliflower PDF Print E-mail

1 medium head of cauliflower, cut into florets
2 tablespoons butter
1 clove garlic, chopped
3 oz cream cheese, softened
½ tablespoon chopped herbs of choice (I used dill)
½ teaspoon salt


Cook cauliflower in boiling water until tender.  Drain.  Transfer to a food processor container.
Saute garlic in butter over low heat until fragrant but not browned.  Add to cauliflower along with cream cheese, herbs and salt. 
Process until smooth.

Serves 3-4.

I still have not tried using cauliflower this way. The herbs and the cream
cheese make this recipe sound so rich and flavorful.

I know many people like to do this instead of mashed potatoes, and they
certainly do look like mashed potatoes. I've tried it once before, and it's
time to try it again.

I am not a huge fan of cauliflower, but my husband likes it and will love this.
And with the garlic, crm cheese and butter, I am sure I am going to love it
too.
